Vegan Ramen Soup

The V5 PowerLine vegetable slicer with 7mm insert was used for this recipe.

Ramen is a meal that consists of 3 parts: soup, noodles and various side dishes. It is easy to prepare but is very delicious! You can combine it with different ingredients and change it to your own taste! Try our recipe and let us know how you like it!
Ingredients for the soup:
  • 250 ml water
  • ½ diced vegetables for the soup
  • 2 spoons of soy sauce
  • ½ teaspoon chilli powder
Ingredients:
  • Noodles
  • 1 large carrot
  • 3 thinly sliced fresh ginger
  • 3 larger mushrooms (or another type of mushroom)
  • 1 spring onion
  • 1 handful of sweetcorn
  • 1 leaf chard or spinach
Preparation:
Soup
Cut the carrots as well as the ginger into thin strips, put them in the pot where we make a stock with half a stock cube, pour in water and simmer for 10 minutes, reduce the heat and add soy sauce and chilli powder, simmer for another 5 minutes.
Vegetables – While the soup is simmering, slice the mushrooms into medium thin slices, sauté in a little oil and fry over a high heat until yellow, then set aside. Cut the spring onions into rings. Cut the chard or spinach into strips. When the sweetcorn is cold, soak it briefly in boiling water and it will be ready to use. When the soup is ready, remove the carefully cooked carrots and ginger and set aside, we need them for serving.
Noodles
Pour boiling water over the noodles for 5 minutes. When they are ready, drain.
Now we have prepared all the ingredients and it is time to serve:
Pour the soup into a deeper ceramic bowl, then arrange the noodles on the side, followed by the vegetables in the desired order, as suggested in the photo of the dish.
Ramen is served warm as an extremely hearty and healthy soup!
