Vegan Baked Potatoes
Baked potatoes with a difference – spicy, exotic and vegan!

Ingredients:
3 potatoes peeled and sliced
2 teaspoons olive oil
½ teaspoon salt
Ingredients for the “bacon”:
½ cup chopped almonds
½ teaspoon ground cumin
½ tablespoon smoked paprika
⅓ teaspoon chili peppers
½ teaspoon garlic powder
½ black pepper
½ teaspoon salt
1 tablespoon tamari sauce
1 tablespoon apple cider vinegar
1 1 tablespoon water
Garnish:
1 cup chopped vegan cheese
⅓ cup sliced black olives
1 avocado, peeled and diced
⅓ a cup chopped cherry tomatoes
1 finely chopped jalapeno
2 tablespoons sliced spring onions
1 tablespoon vegan mayonnaise
2 tablespoons BBQ sauce
Preparation:
Heat the oven to 120°C.
Cover the baking sheet with baking paper.
In a small bowl, add all the bacon ingredients except the almonds. When the ingredients are mixed and combined, add the almonds and stir. Arrange the spiced almonds in a single layer on a baking sheet and bake in the oven for about 7 minutes until golden and set aside.
Set the oven to 190°C.
Place the sliced potatoes in the same baking dish, brush with olive oil and sprinkle with salt and bake for about 20 minutes until crispy.
Sprinkle the vegan cheese over the potatoes and immediately return to the previously turned off oven and allow the cheese to melt. Then top with chillies, tomatoes, avocado, black olives, vegan mayonnaise and BBQ sauce. Sprinkle with some spring onions and enjoy!
