Baked potatoes with cheese
Potatoes are always delicious, whether boiled or fried, firm or mashed. We have a delicious variant that you absolutely have to try! For this recipe we used the Vital Slicer .
Ingredients:
1 kg potatoes, peeled and thinly sliced
2 tablespoons butter
1/3 cup grated mozzarella cheese
1/3 cup grated Asiago cheese
1/3 cup grated Gruyere cheese
1/4 cup freshly grated parmesan cheese
1 large shallot, finely diced
1 teaspoon chopped fresh thyme leaves
salt and pepper
2 cups of whipped cream
1/4 teaspoon grated nutmeg
Preparation:
Place a rack in the top third of the oven and preheat to 220 degrees. In a small bowl, combine the diced shallot, chopped thyme, salt and pepper. Stir and set aside.
In another bowl, mix together the grated mozzarella, asiago and gruyere cheeses. Heat half the butter in a large ovenproof skillet over medium-high heat. Add half of the potato slices and spread out.
Sprinkle 2/3 of the shallot mixture over the potatoes, then pour half of the cheese mixture on top.
Arrange the remaining potato slices on top and sprinkle with the remaining shallot mixture. Pour the whipped cream over and add the nutmeg. Simmer on the stove for 5 minutes.
Brush the potatoes with the remaining butter. Then sprinkle the remaining three cheeses on top and cover with the Parmesan cheese.
Place the pan in the oven and bake until golden brown, about 25-30 minutes. Leave to rest for 5 minutes before serving and garnish with a sprig of thyme.
